Disney Eats: Make Plaza Inn’s Pineapple Upside Down Bundt Cake at Home

One of Disneyland’s sweetest summer treats has arrived a little early.

As part of the upcoming Celebrate Soulfully: Summer Vibes celebration at Disneyland Resort, guests can enjoy the Pineapple Upside Down Bundt Cake from Plaza Inn starting today. If you can’t make it to the parks, Disney has shared the recipe so you can bring a little Disney magic home.

This dessert was created by Chef Michela Gilchrist, who drew inspiration from family traditions and the recipes passed down by her grandfather. Through those recipes she inherited more than flavors—she inherited stories, memories, culture, and connection.

Pineapple Upside Down Bundt Cake Recipe

Makes 12 servings

Topping

  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 2 cups diced fresh or canned pineapple, drained
  • 1/2 cup chopped maraschino cherries

Cake

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 3/4 cup pineapple juice
  • Whipped cream, for serving
  • 12 maraschino cherries, for serving

Instructions

  1. Grease 12 mini bundt or muffin tins with non-stick cooking spray.
  2. Combine brown sugar and melted butter. Add to each cup and top with pineapple and cherries.
  3. Preheat oven to 350°F.
  4. Whisk flour, baking powder, and salt.
  5. Cream butter and sugar until fluffy. Add eggs and vanilla.
  6. Alternate adding flour mixture and pineapple juice.
  7. Pour batter into prepared tins.
  8. Bake for 20–25 minutes until a toothpick comes out clean.
  9. Cool for 10 minutes, invert cakes, and serve with whipped cream and cherries.
